Ingredients
For the Soup
1tablespoonolive oil
1pound450 g ground beef (or half beef, half Italian sausage)
Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if needed.
Add Aromatics & Seasonings
Add diced onion and sauté for 3–4 minutes until softened. Stir in garlic, Italian seasoning, basil, oregano, red pepper flakes, salt, and pepper. Cook for 1 minute until fragrant.
Build the Base
Mix in the tomato paste and cook for 1 minute to deepen the flavor. Add crushed tomatoes, beef broth, and bay leaf. Stir well.
Add the Noodles
Bring the soup to a boil. Add broken lasagna noodles. Reduce heat to a simmer and cook for 15–18 minutes, stirring occasionally, until noodles are tender.
Make the Cheese Mixture
In a bowl, combine ricotta, mozzarella, Parmesan, and parsley.
Serve
