Ingredients
- 6 cups rice cereal squares
- 4 cups corn cereal squares
- 3 cups mini pretzel twists
- 2 cups salted peanuts
- 1½ cups light brown sugar packed
- 1½ cups unsalted butter 3 sticks
- ¾ cup light corn syrup
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 2 cups holiday candy-coated chocolates
- 1 cup white chocolate chips
- ½ teaspoon fine sea salt optional, for finishing
Instructions
- Prepare the mix.
- Line two large baking sheets with parchment paper. In a very large heat-safe bowl, combine the rice cereal, corn cereal, pretzels, and peanuts. Toss gently to evenly distribute.
- Make the caramel.
- In a medium saucepan over medium heat, add the butter, brown sugar, and corn syrup. Stir constantly until the butter melts and the mixture comes to a steady boil.
- Boil & activate.
- Once boiling, continue cooking for 2 minutes, stirring continuously. Remove from heat and quickly stir in the vanilla extract and baking soda. The caramel will foam slightly.
- Coat the mix.
- Immediately pour the hot caramel over the cereal mixture. Using a heat-safe spatula, fold and stir until every piece is evenly coated.
- Bake for crunch.
- Spread the coated mix evenly across the prepared baking sheets. Bake at 250°F (120°C) for 1 hour, stirring every 15 minutes for even drying and crunch.
- Add the candy & chocolate.
- Let the mix cool for 5–8 minutes. While still warm, sprinkle the candy-coated chocolates and white chocolate chips over the mix. Gently stir so the chocolate softens and lightly coats the pieces without fully melting.
- Cool completely.
- Spread into an even layer and let cool completely at room temperature until fully set and crisp.
- Break & serve.
- Once hardened, break into bite-size clusters. Sprinkle lightly with sea salt if desired.
